Vegan Chocolate Shaved Cookies with Pecans
I am sure that behind most bloggers’ recipes there is a story, I mean each recipe is born from something isn’t? This one perhaps was born with my extreme craving of chewing on cookies by 10 pm while in my pajamas and tucked in bed!! I mean come on who in the world stands out of your already warmed spot in bed to make cookies…shame on you Melissa!
It’s true the first time I baked these were in my pajamas under my apron, half asleep and was so tired to even check on a recipe so I came downstairs asking for some light from the baking angels to have mercy and lay some magic on me, did not write any ingredient down nor for how long they were baked and somehow they turned to be the best cookies I have ever made…now, talk about first timers’ luck right?!
Anyhow, I did make them a second time and this time I did write all the steps because I wanted to share them with you, mostly because they are so quick and easy, not joking, I was literally in my pajamas and had them in my mouth within 45 minutes total from start to finish (yes, I ate slightly warm cookies)
Chocolate Shaved Cookies
Yields: 16 cookies
Total time: 45 minutes
Ingredients:
1/4 cup semi-soft coconut oil (quickly softened in microwave)
1/4 cup brown sugar
2 Tbsp unrefined sugar
1 flax egg (1 Tbsp flaxmeal+3Tbsp water)
3/4 cup flour
1/4 tsp baking soda
1/2 tsp baking powder
1 big pinch of salt
________
1/4 cup shaved dark chocolate
1/4 cup roughly chopped pecans
Start by preparing the flax egg by mixing the flaxmeal with water and pre-heat your oven at 350°F
In a bowl, combine all dry ingredients
With an electric blender, mix oil and sugar until well combined and frothy, add the flax egg and mix for a few more seconds
Now slowly, while the mixer is on low add the dry ingredients little by little, trust me adding little by little makes a big difference rather then dumping everything at once, and mix for a few seconds until everything is thoroughly incorporated
Add and mix by hand the shaved chocolate and pecans; with a 2 teaspoon scoop form the cookie balls or you can simply measure them with a teaspoon measure
Finally, set them in the oven for 12 minutes until slightly golden; let them rest minimum 5 minutes or as you wish
