Vegan Chocolate Mousse
If you ever tried chocolate mousse you know it’s like biting into a silky pillow of chocolate; the cream or egg whites gives it the perfect texture and of course sugar helps us make this simple yet extraordinary dessert a good one a little like a simple chocolate cake, because you tell me if there is anything better than chocolate? I would dare to say 90% of the world loves a little something chocolaty be that a cocktail, popcorn or even a pizza! So now you see where I’m heading, very little part of the world is against it so let’s keep the ball going.
I can’t remember when was the first time I ever tried a mousse but anything chocolate will call my attention and so I thought this could call your name as well, something quick and easy that can be served with any topping you have in hand just try to find a citrus something to balance that chocolaty richness; I used this same recipe for my birthday Setteveli birthday cake (you can see image right here) and it certainly can be used to any other dessert you think it will go well with. In some countries like Ecuador being able to get cacao butter or cashews are a bit too expensive and that’s why I have added alternatives like almonds and coconut butter it will definitely not affect any texture and the flavor with the almonds will actually make it richer. So without further ado I leave you with this very simple recipe that can feed more than 4 little mouths and 4 adults unless you decide to dig in by yourself (and I won’t blame you).
Chocolate Hazelnut Mousse

- 2 cup silken or soft tofu
- 12 dates, soaked then drained
- 1/4 cup raw cashews, soaked overnight (alt. soaked and peeled almonds)
- 1/4 cup hazelnuts, soaked overnight
- 1 tsp vanilla extract (optional)
- 1/4 cup + 3 Tbsp coconut milk fat
- 6 Tbsp cacao powder
- 3 Tbsp cacao butter, melted (alt. coconut oil)
- Quite quick and easy simply place all ingredients but the cacao butter in a blender and blend until very smooth and silky, add the butter and blend for a couple more seconds; if you don’t have ramekins you can pour over a wine glass or a regular water glass, pour the mousse into desired serving element and let set and cool for at least 4 hours but ideally overnight.
