If you have noticed 95% of my recipes are born from a memory or tradition, this one falls into the 5% which are not necessarily planned in advance but are born out of any fruit slightly going bad are that are purposely ignored in the fruit basked because to be totally honest I am not a big fan of pears, so if you add this to a cake then I am all for it (won’t stop can’t stop), so go ahead and give your pears a sweet use.

With festivities and the chilly weather at our doors warming spices are magic to your boy and home, because you can’t deny those smells makes home more homey; did you know that cinnamon and cloves are heating spices? same as cardamom and nutmeg they warm up your internal temperature the one you need for this weather (aside from that hot chocolate of course).

Okay so lets get back to what we came for *the cake*, this simple chocolate cake yet rich in flavor can also be frozen (wrapped in plastic and the foil) up to 2 months, simply unwrap and let thaw for a couple of hours; you can also freeze slices for those craving days. This has holiday all over it and your house will be smelling wonderfully; as for the pears I recommend any pear you have that hasn’t been completely overripe or it’s too immature, you want something in the middle so when you bake they are mush or undercooked.

Chocolate Spiced Pear Cake

Ingredients:
  • 1 ¼ cup flour
  • 1/2 cup cacao powder
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp ground flaxseeds
  • 1 pinch salt
  • 1/4 tsp ground cloves
  • 1/4 tsp ground cinnamon
  • 3/4 cup sugar
  • 1/4 cup soft coconut oil
  • 3/4 cup lukewarm milk
  • 2 Tbsp pear puree
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla extract
  • 1 medium pear, chopped in medium cubes and floured

Instructions:
  1. Preheat oven at 325F and prepare your mold
  2. Mix your dry ingredients in a separate bowl; mix sugar and coconut oil until semi frothy and then add all the remaining wet ingredients (but the pears)
  3. Once well incorporated add all your dry ingredients gradually and mix only until combined thoroughly
  4. Add the pears and gently fold into the batter with a spatula. Pour in mold and let bake for 1 hour and 25 minutes; let cool between 10-15 minutes and mold and let on rack to cool completely
