A while back when there was a very slight idea of starting my blog I attempted my very first shortbread cookies and by that time all I had was chicken scratch and didn’t even understand my own letter! anyone relates to this? Anyhow, today I have finally made them again and can now share with you these very easy and quick cookies.

I am always hesitant when using either rose or orange blossom water because they can be easily be overwhelming to your palate just like with cardamom; these have the exact amount of orange blossom water while delightfully melting bite by bite.

They can be cut in any shape you want and if you don’t own any type of cutter you can simply use a ruler and knife, cut them before you set them in the oven and remember they tend to shrink an itty bit… I hope you enjoy these quick to make cookies.

Orange Blossom Shortbread Cookies

Makes: 11 cookies

Ingredients:
  • 1/2 cup AP flour
  • 1/4 cup semolina flour
  • 1/4 cup coconut oil, solid
  • 3 Tbsp unrefined sugar
  • 2 Tbsp orange blossom water
  • 1 Tbsp mixed zest of Orange and Lemon

Instructions:
  1. In a bowl mix all dry ingredientes
  2. Add Coconut oil and orange blossom water
  3. Mix with your hands until you have a consisten of wet cumbly sand
  4. Form circle with your dough, wrap in plastic and let rest in your fridge for 15 to 20 minutes; preheat your oven at 350F
  5. You are now ready to roll your dough; using the same plastic you wrap the dough in, place it on top and roll it for a smoother surface
  6. Cut them with your shaped cutter or a knife and set on a baking sheet; bake for 23 minutes
  7. Set them quickly on a cooling rack and let cool completely; dust with powdered sugar and orange zest
  8. Serve and share with some tea and voila!
