Vegan Sticky Plum Cake
Summer fruit produce is the best, we get an array of stone fruit from sweet to tart and we can mix and match at our pleasure! Stone fruit is at its peak and while we can buy it at our local market we rather get it from a company who sells produce which has been rejected from big chain supermarkets due to some imperfection like mild bruises or over ripeness.
This boozy cake was made with an orange liquor from back home but it can easily be replaced with a couple other liquors like I listed on the recipe; it is sticky and perfectly sweet you won’t miss anything to go with it besides a cuppa tea. Plums aren’t my favorite fruit to eat alone aside from dried (a.k.a. prunes) so baking up something with them is my perfect blend since they have a little tart to it.
If you would like to make it non-boozy you may take away the liquor out but you will loose a little of its flavor which is mainly the liquor. I rarely add booze to my baked goods so perhaps maybe go back to my archives and delight yourself in some other delicious treat, one all can enjoy and be shared.
Boozy Sticky Plum Cake

- 3/4 cup almond flour
- 1 cup AP flour
- 3/4 cup + 3 Tbsp cane sugar
- 1 tsp baking soda
- 1 tsp tsp baking powder
- 3 Tbsp coconut oil, liquid
- 1/3 cup + 2 Tbsp unsweetened apple sauce
- 1/4 cup orange liquor (e.g.: Cointreau or Grand Marnier)
- 2 Tbsp lukewarm milk, I used almond
- 1 tsp almond extract
- 2 plums, thinly sliced
- Lets start by greasing and lining the bottom of our mold with parchment paper, I used an 8” round mold and and preheat your oven at 350F
- Mix dry and liquid ingredients in separate bowls; slowly pour the wet ingredients over the dry and mix on medium low until almost well combined and then slowly mix by hand no longer than 30 seconds so you don’t over-work the batter
- Pour the batter in your prepared pan and gently arrange the sliced plums in your preferred design
- Bake for 40 minutes, take out of the oven and let rest in pan for 5 minutes and then allow to cool completely on a cooling rack
- It is best savored with a cup of white tea or simply on its own…Cheers and enjoy the sharing!
