Remember I told you I bought a decent amount of cherries, well it might have been a bit more than what I thought and besides eating them alone I really wanted them in a dessert style so here is yet another cherry recipe but quite easy and so quick to make and bake. I have had crumble a handful of times and I never cared for the ice cream part so this one is quite sweet and flavorful enough to avoid the ice cream part.

If you have seen any of my recipes you will notice most of them have an inspiration and are born not because I am being paid but because I always bake thinking of someone in my family who would love it, and while I know (or so he tells me) Jonathan loves and is my number 1 taster with all I bake, this recipe has my mom’s name written all over it, she loves loves cherries.

Cherries are such a versatile fruit, besides all the pitting process, they can be put in anything you can imagine from your morning oats to your tasty savory dishes but this so far is my favorite dish full of cherries till you die! they plump up while one stove and the crumble with almonds is so perfect together…so if you have cherries (perhaps ripping up) sitting on your fridge start this baked quick dish.

Cherry Crumble

Makes: 4 servings

Ingredients:
  • 2 cups cherries, pitted
  • 1/2 cup sugar
  • 2 tsp cornstarch
  • 1/2 tsp allspice, freshly ground
  • 1/2 tsp almond extract
  • 1/2 cup flour
  • 3 Tbsp brown sugar
  • 1/3 cup chopped almonds
  • 1/4 cup + 2 Tbsp cold coconut oil

Instructions:
  1. Preheat the oven at 360F
  2. In a small sauce pan pour the first 5 ingredients on slow heat and let slowly simmer until you achieve a mildly thick sauce and the cherries are soft
  3. Pour the cherry mixture in a round pan, I used a 6” round oven proof dish
  4. Now, in a separate bowl combine the last 4 ingredients and until you have a crumbly dough, set in fridge for 15 minutes; slowly crumble evenly over the cherries and set in the oven for 40 minutes
  5. Let rest for 15 minutes and serve; often crumbles are served with ice cream but this one is juicy and full of flavor that it goes well with a cup of tea or even iced tea
